About the apiary

How Alexandra Thyme Honey operates

Alexandra Thyme Honey is one of the few NZ apiaries still producing genuine single-flora wild thyme honey — the dry, alpine, herbal honey that Central Otago is famous for. It's a tiny operation by national standards (380 hives), but what comes out of it is some of the most distinctive honey in the country. Hard to find, sold mostly direct.

Practices

  • Single-flora wild thyme harvest
  • Hand-extraction, no centrifuge for thyme batches
  • Tussock-flora multifloral autumn release
  • Direct sales and selected stockists

Certifications
