Selwyn Clover Co is the largest single-flora clover producer in the country, running hives across the irrigated dairy pasture of the Canterbury Plains. Their creamed clover is the kind that ends up in NZ kitchens by the kilo — supplied widely to bakeries and used in commercial processed honey. Smaller-volume bush blend from the foothills rounds out the year.
